Disney On Ice is one of my favorite things to take my kids to. It’s almost like watching the movie except no screen. It sounds funny, I know, but I can’t stand screen time sometimes (because the kids always want it) so it’s nice to hear stories without the screen and without them asking for a screen.

Anyway, I had no idea what to expect as we arrived at the Vivint Smart Home Arena. As it was sponsored by Stonyfield YoKids, we got to hear about staying healthy and active. Then Mickey and Minnie came out and started the show. And from there, it was just spectacular.

I wasn’t sure how much the story would be changed and was pleased that the story basically stayed the same but a lot of details were taken out which was just fine with the kids and I. I wasn’t sure how they’d make some of the scenes and what they would use to make the scenes work but I was surprised every time about how seamless transitions were and how great the props and stages were for each scene.

My favorite part was the snow. It added a magically aspect to the story and it was so cute to listen to all of the kids ooh and aah over the magic of the snow the first time it fell.

While we were sitting in the lower bowl, I noticed many people sitting in the upper parts of the arena. I wasn’t sure how their seats would be as they seemed to be seated oddly but once it started, I noticed that the big screens were being used and the performance was being shown on the screens so everyone could see well. In fact, I noticed myself watching the screens more and more throughout the show so I could actually see the actors’ faces and expressions.

Overall, it was a wonderful performance. The ticket prices are a little higher but if your child loves “Frozen” at all, I would highly recommend it.

Jones Creek Beef & Chuck Roast Recipe

Although I’m a foodie at heart, I have never taken the effort to buy 100% grass-fed beef. I guess I didn’t understand how different it would taste. I’m pretty picky about where I spend my dollars on food and so I’ve tried to find only the best but after trying the beef that Jones Creek Beef (located in Springville) provided us, it looks like I’ve found a new place to buy my meat.

The most shocking thing about this leaner, grass-fed beef is that not only do you cook it at a lower temperature (at least 50°F) for 30-50% less time but you also start the roasts at room temperature. This was perfect for when I made the following recipe because I made it on a Sunday. I put it into the slow cooker right before I left my house and 4 hours when I returned, it was perfectly cooked. I, however, am terrible at reading instructions and so it was set to cook for 2 more hours so I was lucky that I got home and checked it when I did.

Slow Cooker Pot Roast Recipe

Here’s some facts about the cows:

  • they never see the inside of a cage
  • they eat grass (because that’s what’s natural)
  • they have constant access to grass pasture

And here’s some benefits from eating grass-fed beef:

  • lower in total fat
  • higher in beta-carotene
  • higher in Vitamin E
  • higher in B-Vitamins
  • higher in minerals: calcium, magnesium, and potassium
  • higher in total Omega-3
  • higher in healthy ratio of Omega-6 to Omega-3 fatty acids (1.65 vs. 4.84)
  • higher in Vaccenic Acid
  • lower in those saturated fats commonly linked with heart disease

(Before you judge my pictures, I read my own recipe wrong so I’m going to give you the recipe I actually made. Feel free to cut the tomato paste down to 2 tablespoons of tomato paste for the actual recipe. And now you know why my gravy and potatoes are so red. Oops.)

Slow Cooker Pot Roast Recipe

Slow Cooker Chuck Roast

  • 2 pounds Jones Creek Beef chuck roast
  • 1/4 cup all-purpose flour
  • 3 tablespoons oil
  • 1 teaspoon garlic, minced
  • 6 ounces tomato paste
  • 3 cups beef broth
  • 2 bay leaves
  • 1/4 teaspoon ground allspice
  • 1/2 cup fresh parsley leaves, chopped
  • salt and pepper

DIRECTIONS

  1. Thaw roast to room temperature.
  2. Season roast with salt and pepper.
  3. Coat roast in flour and shake off extra.
  4. Heat 2 tablespoons oil in skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 2 minutes per side.
  5. Transfer the roast to the slow cooker. (Add in onions, potatoes, carrots, or other vegetables.)
  6. Add remaining 1 tablespoon oil to the skillet over medium heat. Add tomato paste and stir until the oil begins to turn brick red.
  7. Add flour and broth until thick.
  8. Add in bay leaves, allspice, garlic, 1/4 teaspoon salt and a dash of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly. (About 4 minutes.)
  9. Pour the gravy into the slow cooker.
  10. Cover and cook on low for about 4 hours or until done.
  11. Once done, remove the roast and let rest for 5 minutes. Discard bay leaves. Toss vegetables and gravy in parsley and season with salt and pepper.

This free event on February 20, 2016 is designed to provide kids, between the ages of 4 to 9, a completely free experience to try youth hockey. A limited amount of equipment is available to borrow. Our top coaches will be on the ice to assist your child in learning the basics. Your son or daughter does not need any previous skating or hockey experience. If you have a helmet please bring it (bike helmet is fine). Winter gloves are also recommended.

Ice Castles Review

The ice castles are gorgeous every year. They are made from man-made icicles that take months to perfect.

This year they incorporated a slide which was a lot of fun but made your bum very wet if you didn’t wear snow pants so learn from our mistake: wear snow gear. It is very cold so make sure everyone is bundled up.

Lights are placed within the ice which makes it gorgeous to view and keeps the place lit up. My favorite part is always the entrance way when you first walk in. It is basically a tunnel of ice and then it opens up to a gorgeous icy scene. This year they also had a water fountain in the middle which was gorgeous for photos.

This really is a sight to see and if you haven’t been before, now is the time. This is the first year that it was held up Soldier Hollow instead of downtown Midway which led to a gorgeous backdrop and a lot more parking!
