Mexican Chicken Soup

I found this great website that ISU Extension does.  I love State University Extensions because they always have great information.  This recipe looks so simple and ISU Extension states it’s only $0.82 per person!

Serves: 8
Serving size: 1 cup
Cost per serving: $.82

Ingredients

  • 2 15-ounce cans diced tomatoes (Mexican-style)
  • 1 15-ounce can black beans, drained and rinsed
  • 2 cups frozen corn or 1 15-ounce can corn, drained and rinsed
  • 1 14.5-ounce can sodium-reduced chicken broth or 2 cups Homemade Chicken Broth
  • 2 cloves garlic, minced or 1/2 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin (optional)
  • 1/4 teaspoon pepper
  • 1 pound skinless, boneless chicken breast

Instructions

  1. Add tomatoes, beans, corn, broth, garlic, chili powder, cumin (if desired), and pepper in large saucepan.
  2. Remove and discard any visible fat from chicken. Cut chicken into large chunks and add to the saucepan. Heat to boiling, reduce heat and simmer, covered, for 20 minutes, or until chicken is tender.
  3. Remove the chicken and place on a plate; use forks to shred the chicken. Return the shredded chicken to soup.
  4. Serve with choice of garnishes, such as baked tortilla chips.

Monday

Pulled Pork (Crockpot) Wraps

Cover Boston Butt with Cajun seasoning.  Place 1 chopped onion into crockpot and place roast on top of that.  Then pour one can of Coke over the roast.  Cook on low (8-10 hrs).  30 minutes before serving, take roast out of crockpot and shred.  Empty juices, with the onions, out of crockpot, saving about 1 cup.  Place shredded pork back into crockpot, adding some of the saved juices, as needed.  In a bowl, mix 2 c BBQ sauce and 1 c apricot jam.  Then add that to the pulled pork along with 1-2 c sliced sweet peppers and simmer for 30 more minutes.  Serve on tortillas.  Save the leftover pork for Friday night’s supper.

Tuesday (prepare the turkey burger mix the night before and refrigerate)

Turkey Burgers and Alexia Sweet Potato Fries

Sauté 1/2 oz of scallions (save the other scallions for tomorrow night’s supper), 1/4 c celery (save the rest for tomorrow too) and 2 granny smith apples in 1 Tbsp canola oil until tender. Let cool.

Place the ground turkey in a large mixing bowl. Add sautéed items with 2 tsp tabasco sauce, 1 lemon , juiced and grated zest, and ½ bunch parsley , finely chopped. Shape into eight 8-ounce burgers.  Cover and refrigerate.

When ready to cook, season the turkey burgers with salt and pepper. Place in a hot, lightly oiled pan. Cook each side for 7 minutes until meat is thoroughly cooked, making sure not to over cook. Let sit for 5 minutes. Serve with a side of mango salsa and a French hamburger bun. Prepare Fries according to package.

Wednesday

Poppyseed Chicken Pasta Salad **Great Leftovers!!

Consider making double!  Place Valley Fresh Chicken in a large bowl.  Bring a pot of salted water to a boil.  Add the one box of penne pasta and cook until tender – about 8 minutes.  While this is boiling, chop 1 bunch of green onions and 4 stalks of celery.  Add the onions, celery, and one bag of craisins into the bowl with the chicken.  Once pasta is done, drain and also add to the bowl.  Then add one bottle of Brianne’s Poppy Seed Dressing over the pasta salad and stir.  You may serve this warm or cold.

Thursday

Sole Fillets with a bag of Bird’s Eye Vegetables

Sprinkle the fillets with 2 tablespoons of the lemon juice and set aside for 5 minutes. Pat dry with kitchen towels. Dip the fillets in ½ c seasoned flour (add salt and pepper to taste), shaking off any excess. Melt 6 tablespoons of butter in a large frying-pan. Add the fillets, a few at a time, and cook them for 4 to 6 minutes on each side, or until the flesh flakes easily. Arrange the fillets in a warmed, shallow serving dish. Wipe the pan clean and add 1 Tbsp lemon juice and 2 Tbsp butter. Place over low heat and simmer until the butter melts, stirring constantly. Remove from the heat and pour the butter over the fillets. Garnish with thin lemon slices and 6 parsley sprigs.  Serve at once with veggies.

“Nacho Work Week Anymore”

Cover a baking sheet with tortilla chips.  Generously add shredded cheddar cheese to the chips and top with pulled pork from Monday and a sliced jalepeño.  Bake at 350 until cheese bubbles.  Add diced tomatoes, sour cream, guacamole, etc.

Tangled

I had heard wonderful things about the movie “Tangled” which made me a little worried to go see it.  Sometimes when people talk up movies so much, I never enjoy them as much as everyone else seems to.  As the movie started, I was quite skeptical that this was going to be “the best movie ever.”

So you’ve got this princess who is kidnapped and stuck in a tower.  Her “mother” isn’t actually her mother and she’s taught this girl to never leave the tower.  Then there’s this guy who steals from the king and queen and he’s on every wanted poster, and of course, he just happens to find the tower … and this is all in the first 15 minutes!  The movie continues and it is just as exciting as the first part.

Did it disappoint?

No way!  It was the best movie I’ve seen in a long time.  There were no witches with magical powers, no adult topics … it was great for the kiddos!  And great for adults!

First Solid Feedings

As I have started to feed my baby solids, I have found that adding formula or breast milk to the food really helps.  I first added water to the cereal but realized that my baby really wasn’t a fan of it so at the next solid feeding, I tried adding some breast milk – something more familiar to her.  She loved it!  Now she loves when I make the cereal really runny and put it in a plastic cup for her to drink it.

My husband and I love food.  Over the past few years, we have become very picky about what we will eat.  We’ve cut out almost all fast food and if the service or food doesn’t impress us at a restaurant, we won’t go back.

Happy Sumo is one place that we absolutely love and then when we found out they have a VIP menu, we jumped right on board.

We were able to take a date night last weekend to visit Happy Sumo.  Knowing that there is a “Wine & Dine After 9″each weekend night, we went but didn’t take a voucher which allows 50% off of food because we’ve never needed one before.  Usually they just give us a slip to fill out.  When we told the waitress we didn’t have one with us, she said that she couldn’t allow us to use it without proof.

Proof of what?  That we know about their VIP menu?  That we knew which items we could get 50% off of that night?

She asked if we could show the VIP slip on our phones.  Nope.  We aren’t like all the cool people with internet on our phones.  But the cool people next to us at the sushi bar did and we could use their phone for “proof.”

She called over her manager and said that we didn’t have our slip and we couldn’t show the slip on our phones but we could on our friendly neighbor’s phone.  He said, “Okay.  Show me.”

So the nice man pulled up the website with the VIP slip (from his account, by the way), handed it to us, and my  husband showed the manager.  It worked and we got 50% off our entire meal – Chong’s Chicken, Cabana Roll, Vegas Roll, and a Sumo Sampler – all for $20!

But my question still remains, we obviously knew about the VIP menu, we knew what the VIP deal was, and if we could have showed it on our phones but didn’t have the internet, why would we have to show it on some stranger’s phone?  What was the whole point of this proof thing?  As I’ve linked here on this post, it is very simple to find the VIP menu and voucher – when the month changes, you just change it up in the URL.  It just took a simple Google search to find this link.

So I’m still confused as to why it was such a big deal that we didn’t print one off but I will definitely remember for the next time to print one off.

And they are lucky.  If something like this was to happen at almost any other restaurant, we wouldn’t go there again.  The waitress created too big of a hassle for us.  But the food is just too good!  And a whole meal for two (that we didn’t even finish in one sitting) for $20?  Amazing!

I highly recommend Happy Sumo.  All of their main dishes are excellent, their sushi has top notch, and their appetizers are always good.  It is a more expensive restaurant to eat at, but it is very worth it.  And if you join their VIP list, you can get food for much cheaper, which, in my opinion, always makes the food taste just a little bit better.

Laptime & Storytime at Orem Library

As my babe is starting to recognize people and understand the world around her, I am constantly looking for new groups we can join so she can have a social atmosphere (all of her stuffed animals in her playpen isn’t as social as I’m hoping for).

Each week, Orem Public Library holds a Laptime and Storytime for the little ones.

Laptime begins at 10 am on Tuesdays, Wednesdays, and Thursdays for 20 minutes.  These are aimed towards babies and toddlers.  Songs, fingerplays, and short stories are geared towards them.

Storytime begins at 10:30 am on Tuesdays, Wednesdays, and Thursdays for 30 minutes.  These are for preschoolers and young school-aged children with stories, puppets, and activities.

Once a month, they also hold a bilingual story time.

I definitely am looking forward to taking my little one to some of these events – especially because they’re free!

What’s for Lunch?

My husband’s work is too good to him.  Sometimes they stock up the fridge with some good food – recently, someone brought in frozen pizza rolls, Costco style.  So of course my husband ate them.

At home, we make homemade pizza all the time.  It’s one of my favorite foods and it costs a lot less if we just take out a half hour out of our day to make it instead of buying one.

So I had this idea.  What if I just make pizza rolls?  They’ll be slightly healthier and taste a million times better.  And I was right.

First I made the dough.  This is by far my favorite pizza dough I’ve ever made.  Sometimes I have to add a lot of extra flour but it always turns out perfect.

After rolling out the dough, I used a pizza cutter to make a lot of rectangles in the dough.  I added a little bit of sauce (tomato sauce with basil, oregano, and garlic powder seasonings), mozzarella cheese, and pepperonis (I cut the regular-sized ones in fourths to create small ronies).

Towards the end, I got really lazy and made each pizza bite huge, but all in all, they turned out wonderful!  And a little dab of ranch doesn’t taste too bad with them either.

I-15 in Utah County

Have you driven on the mess that is I-15 in Utah County?  It’s my most dreaded part of the day.

Today I had to drive from Orem to Provo and the quickest way to do so is to take the freeway.  Well, little did I know that there are entire sections of road where you can’t see the lines!  So I just had to follow the truck in front of me and hope for the best.  Not only that, but I hit and sometimes missed a few potholes.  I thought they took care of those!

The freeway is just too crazy.  I can’t wait until December 2012 for them to be done with all the construction!

What’s for dinner?

Chimichangas!

I used this tortilla recipe.  My husband made it a few weeks ago and it worked great!  Tonight, it did not work so well but I think I beat my dough too much.  I would suggest not handling the dough too much – otherwise it is a lot more like a pie crust and is very, very flaky.

Put in shortening until it’s crumbly without too much flour.  But this is the crucial part – don’t work with the dough too much.

The dough.  Let it rest for a little bit – probably doesn’t need to be more than 15 minutes.

This is our favorite filling – enchilada sauce, black beans, tomatoes, rice, chicken (with Sazon Goya seasoning), cheese, and onion.  There’s no certain amount that I put in – I just pour ingredients until I feel like there is a good amount of it.

Cook the chicken first.  Pull it out and shred it.  Cook onions, then add in the rest of the ingredients.  Add the chicken back in and let simmer to combine the flavors.

Heat oil in a pot until it’s hot enough to fry something quickly.  Put the filling into the tortillas, fold them up, and fry until brown.  I fried them for about 30 seconds.

Add enchilada sauce, cheese, sour cream and/or any other ingredients to the top that  you like.

The Bachelor Premier

Tonight is the season premier of the next “The Bachelor.”

After all of these seasons, I honestly can’t believe they’re still going with these shows.  On this guy?  He was already the bachelor a few years ago and didn’t choose either girl.  I didn’t watch that season so I was not upset at him, but apparently there are quite a few angry women out there because of his actions.  But now he’s a  so-called changed man and is “ready to find love.”  We’ll see how that goes.

Of course I get hooked on this show but it bothers me every time – I mean, some of these things that happen seem so staged, yet for some reason, I just keep watching.

Despicable Me

I recently watched Despicable Me after hearing many good things about the movie.  Maybe I went into it with too high of expectations but it definitely was not one of my favorite movies.

The main character is a villain which is a fun idea since usually the villains are the bad guys.  I’m not sure how I feel about having sympathy and rooting for a villain.  The enemy in the movie is another villain.  It just seemed too weird to root for one villain but not the other.

However, there are three little girls in the movie who the villain adopts which makes the movie worth it to me.  They are so adorable.  Without them, I don’t think I would have cared if the main guy won the battle or not.

I would say it’s worth it to watch this movie once but I’m not sure if I would watch it again.  Kids, on the other hand, seem to absolutely love this movie.  There are a lot of fun characters in the movie and no swearing or other adult topics – not that I saw anyway.

I’m Dreaming of …

and being anywhere else but this frigid weather.

Last May, my husband and two of our friends took a trip to Hawaii.  It was such a great relaxing trip.  Not only that, but I was 7 months pregnant and my friend was 4 months pregnant.  This was our last really good, relaxing vacation before a baby (or another baby in her case).

I dream of going back on a regular basis.  Life there was so much simpler.  We woke up, went to the beach, found a Hawaiian Ice store, watched the locals, went back to the beach, stopped by the local grocery store for some more food to take up to our vacation rental which sat on the top of a hill overlooking the ocean … I mean, tell me that isn’t the perfect life.

Instead, we get to deal with icy roads, work, a crying, hungry little girl, and the noise of the neighbors upstairs.

New Year’s Resolutions

With the New Year just around the corner, many people are setting new goals.  Here’s some ideas to make your goal setting easier:

  • Make short-term goals.  They are easier to achieve and will help you feel more accomplished when you reach your goal!
  • Make easy-to-reach goals.  Making a goal to exercise 6 days a week for the entire year is a little tough.  Things are bound to come up that will stop you from reaching your goal.
  • Add a few items that you already know will probably happen.  For example, if I was to make a New Year’s Resolutions list, I would add “Help my daughter learn to walk.”  She is six months old and more than likely will walk this year.  Once she does, I get to cross it off my list!
  • Make general goals.  When goals are too specific, it is really difficult to reach them.  One really difficult goal that I’ve heard is “I will not eat any sugar and will lose at least one pound a week.”  Instead, I would change this goal to say, “I will try to eat less sugar and lose a few pounds within 4 months.”  It’s much broader, seems a lot easier, and is probably a lot more reasonable.
  • Look back on past resolutions that you have made and decide whether they were good goals to make or not.  It’s always a good thing to learn from the past.  If your past goals have not been met, it might be a good idea to tweak them to make them easier to accomplish or to realize that past goals may have been unrealistic and change your upcoming goals to be ones you can definitely meet.

But the real question is, do this resolutions really help?  Is it good on our self esteem to make these lists year after year, only to realize by the end of the year that we hardly did any of them and maybe don’t even remember what was on our list?

I still really enjoy the 101 things in 1001 days.  Not only does it give you 32 months to complete the goals, but it helps create more of a habit than encouraging you to quit soon after you try to meet a goal on your resolutions list.  Plus, with all of that time to complete the goals, if you fail once, it’s okay because you still have many more months to try to complete it.  But this is only my opinion.

Children’s New Year’s Eve Activities

With New Year’s Eve approaching, there are many parties and events but what if you just want to stay home and play with the kids?  Here are a few of my favorite activities:

  • Make noise makers – empty paper towel or toilet paper cardboard rolls with beans inside and plastic wrap with an elastic band or tape to close off each side is a simple thing to make.  You could also use paper plates (stapled together), empty boxes, or make your own enclosed shape with paper.
  • Mixed up games – use different pieces and different rules from various games and make a new game.
  • Make a tent with blankets and furniture – I personally enjoy watching a movie or television show after I set up the tent.
  • Make a time capsule.
  • As a family, review the past year and talk about some of the favorite moments and activities of the year.  Make new goals or a list of activities for the upcoming year.
  • Have a movie night or a movie marathon.
  • Make some goodies.

Here’s how we make our noise makers:

we used peanuts instead of beans, you could also use rice or anything else that is small
next we put one plate on top of the other
we stapled the top plate to the bottom plate
the last thing to do before making some noise is decorating!
