Utah County lost a sweet, young boy today: Orion Gunderson. He was involved in a tragic accident which sent him to the hospital on Sunday afternoon in extremely critical condition and after less than a day of life support, he passed away. Orion was only 11 years old. If you can, please donate to the Orion Gunderson fund.

Michelina’s Seafood Alfredo, Made Easy

I’ve been in a cooking slump recently. I make homemade food for weeks at a time with us hardly ever going out to eat and then there are weeks like these where I don’t even want to think about having to cook one more meal from scratch.

Here is a yummy recipe for Seafood Alfredo:

Ingredients:

Cook Time:

  • 15-20 minutes

Preparation:

  • Place the asparagus spears and precooked shrimp onto a baking pan
  • Sprinkle with salt and pepper
  • Bake the seasoned asparagus spears and precooked shrimp at 400 degrees for 15 minutes
  • While the shrimp and asparagus spears are cooking, open the corner of the Michelina’s Fettuccine Alfredo box and place in the microwave
  • Microwave on HIGH for 2 minutes
  • Stir entrée and microwave for an additional 1-2 minutes
  • Stir prepared shrimp into the cooked Michelina’s Fettuccine Alfredo pasta
  • Place the asparagus on top of the pasta or to the side
  • Optional (unless you’re in my family): Top with with shredded Parmesan cheese
  • Serve and enjoy!

Ringling Bros. and Barnum & Bailey Circus Review

This past weekend, I had the opportunity to watch the Ringling Bros. and Barnum & Bailey Circus. I was disappointed there was no Animal Open House because of the construction going on in Downtown Salt Lake City, but there was still a pre-show that is open to all ticket holders which was fun. We were able to be up close and personal with some of the performers and a few of the animals.

I’d really like to explain everything in great detail about what happened at the circus, but I think I’ll allow you to just enjoy the photos with a few captions.

By the way, the circus is still in town tonight so don’t miss out! You can still get tickets if you hurry fast!

Okay, see, doesn’t that look fun? Our kids loved it and we have young kids. They were entertained the entire time and what I loved about this circus was that something was continually happening on one part of the stage while it was dark and they were setting up things on the other side of the stage. For example, I was so enthralled with the man hanging upside down way above the ground that I didn’t even see them set up the whole tigers thing.

The animals looked like they were well taken care of and treated well. There is also a preshow about an hour before the circus begins where all ticket holders can go down to the stage and interact with the performers and see some animals up close. I would highly suggest going!

Let’s face it. When it comes to being a mom, sometimes all you feel like is, well, a mom. I had no idea until a couple of years ago how good body scrubs are. If you haven’t tried one yet, this might be the one for you. Plus, it’s called “Sugar Kiss.” Everyone, and I mean everyone, needs a good “sugar kiss” every now and then.
This is so great for cleansing and purifying the skin. It has some great nutrients made to make your skin feel good.
After taking a nice, care-free, kid-free, relaxing shower, you can treat your skin right by adding in some nice body butter. Vanilla is one of my favorite smells, but luckily Zulily has other scents for those non-lovers of vanilla.

LiveSmart Bars

We had the opportunity to try some LiveSmart Rawbars. We tried the Original Fruit & Nut, Cranberry Pumpkin Seed, Power Fitness, and Chocolate Suicide bars.

The original bar was good. It had a great mix of seeds with a good amount of fruit. My kids seemed to love it but not as much as the Cranberry & Pumpkin Seed.

The Cranberry and Pumpkin Seed was my favorite which is weird because I don’t like cranberries or pumpkin seeds. But for some reason, combined with all of the other good flavors, it was amazing. My kids really liked it too, which is good to note for our next shopping trip.

I ate this Power Fitness bar when I was sick and knew I wasn’t getting the nutrients or calories I needed that day because I had hardly eaten anything. Unfortunately, I couldn’t really taste it but after eating it, I felt satisfied (as each of these bars has 195-196 calories in them) and I felt better about what I had eaten … versus the 1/4 oatmeal pancake and 2 grapes I had eaten earlier that day.

The last bar I tried was the Chocolate Suicide bar. I’ll admit, it wasn’t my favorite. However, I think the problem was that when I ate it, I was wanting something really healthy (like fruit) and not a flavor of chocolate. In general, I like chocolate but I have to be in the right mood for it. I did think, though, that the nuts in the bar were fantastic. That was by far the best part about this bar. Given the right situation, I think this would have been on the top of my list as far as favorites.

As a person who studied exercise and nutrition during college and has continued to do so since then, I can’t necessarily recommend these for meal replacements. However, I think they are great snacks for on the go, between meals, and when you really need a pick-me-up. I recommend eating every 2-3 hours which means that these would be great to include into your everyday life, just not in place of several meals.

The event will be held in the UVU Hangar B at the Provo Municipal Airport (1185 Mike Jense Circle). The Red Carpet Event begins at 5 pm.
