Art City Days 2013, Springville

Springville Art City Days celebration is filled with fun for the entire family. Voted “Best Of Utah County” by Daily Herald readers in 2013, 2012 , and 2011. Art City Days has a myriad of activities and events for all ages, and most are free to the public. Artisan Bread Recipe

I had no idea Artisan Bread was so easy to make until I watched someone make it. Since then, it’s been my go-to bread and has never failed me.

Artisan bread needs a dutch oven-type atmosphere. We own a ceramic dutch oven but my mother-in-law says it’s most important to “create an oven within an oven.” It needs to be a 6-8 quart heavy covered pot like cast iron, enamel, Pyrex, or ceramic.

Artisan Bread Recipe

Artisan Bread Recipe:
3 cups flour
1/4 tsp active dry yeast
1 1/4 tsp salt

Combine all ingredients into a bowl. If you want to make a flavored bread, now is the time to add ingredients. In the past, I have added garlic powder, Italian seasoning, and grated Parmesan cheese. If you are adding other ingredients, increase yeast to 1/2 tsp.

Add water to the dry ingredients and mix until all flour is incorporated. The dough will be stiff. Cover bowl with plastic wrap. Let dough rest for 12-18 hours at about 70 degrees. However, I’ve stopped the resting at 7-8 hours and the bread has turned out fine.

You will know the dough is done resting when there are little bubbles dotting the surface of the dough.

After the rest, place dough on well-floured work surface and lightly sprinkle dough with flour. Create a surface tension by gently kneading the dough for about 7-8 kneads.

Place dough into a well-sprayed, non-stick bowl. I usually use the same bowl and cover the inside of the bowl with non-stick cooking spray. Place dough into bowl, seam side down.

Cover the bowl. Let the dough rise for 2 hours. Dough will be ready when it has doubled in size and does not readily spring back when poked with a finger.

After dough has been rising for about 1 1/2 hours, preheat oven to 450 degrees Fahrenheit. Place covered 6-8 quart pot in the oven for 30 minutes.

When dough has risen for 2 hours, carefully remove HOT pot from oven. Turn dough over into the pot (seam side should be up). Cover and bake for about 25 minutes. At this point, my bread is always done but you can also uncover the pot and continue baking for about 5-10 minutes or until browned to your liking.

Utah Pasifika Festival 2013

The Utah Pasifika Festival is a fun-filled, two-day event beginning on Friday, May 17, from 6:00pm to 10:00pm and Saturday, May 18, from 9:00 am to 6:00 pm. Come celebrate and learn more about the Polynesian cultures of the South Pacific. Islands represented are Hawaii, Tonga, Samoa, Fiji, Tahiti, New Zealand, and more. There will ethnic dancing, musical selections, great food and craft booths.

Murdock Canal Trail Grand Opening – May 18, 2013

The Murdock Canal Trail is in my neighborhood and my family and I have traveled it so many times now, it is like a normal road. I actually had no idea they were planning to cover the canal and turn it into a path. Now that it is complete, our family travels it almost daily. The Murdock Canal Trail begins at roughly 1100 E. 800 N., in Orem.

You are not going to want to miss the Murdock Canal Trail Grand Opening, to be held on Saturday, May 18th.

Moana Nui Utah Foundation Luau 2013

The Moana Nui Utah Foundation is hosting a luau on Friday and everyone is invited.

The foundation, a non-profit corporation whose mission is to “Enrich the lives of Pacific Islanders,” will present a free show and for just $10, you can also enjoy a plate of traditional island food. Proceeds from the meal goes directly to the Moana Nui Utah Scholarship Fund.

The purpose of the Moana Nui Utah Scholarship Luau is to celebrate those individuals that have exhibited the drive and determination to further their education, provided service in the community, and strives to better the lives of those around them.

The evening’s events, held at North Park, 500 N. 500 West in Provo, begin at 4 p.m. with a traditional Maori welcoming ceremony, with the high school scholarship awards ceremony following closely behind. The Foundation and the Weingarten Family will then recognize the Utah Valley Regional Medical Center’s Cardiac ICU and Inpatient Rehab Services Nurses, Doctors and Staff. Then the luau will commence at 6 p.m.

Entertainment during the luau will consist of Hawaiian, Tongan, Fijian, Tahitian, New Zealand and Samoan performances. There will also be a fire knife dance as well as an audience participation dance. The night will finish up with a Pacific Island Concert at 8 p.m.

Mikarose & $50 Giveaway

Mikarose is a fashion and “reinventing modesty” clothing business.  There is a Mikarose at the local mall, University Mall in Orem, and I always have to go in each time I’m at the mall.  Mikarose has the perfect dresses, skirts, and tops for any occasion.  You could wear them for everyday wear, for nights out on the town, to church, and they have clothes that can even be worn during pregnancy and nursing!

As a mother, especially a nursing mother, I want to look somewhat fashionable.  I spent many months in my sweats and now I’m ready to look like I actually care about how I look … because I do care, despite what it may look like if you drop over unannounced at 2 in the afternoon.  Dresses and skirts are clothes that I enjoy wearing all day (jeans are just too tight) and because of the modest and fashion that Mikarose provides, their clothes are a perfect fit for my wardrobe.

Since the following two dresses came out, I have been loving them and wishing they were mine.  I finally decided I would buy the second dress, the MaryAnn dress, on Saturday at the mall and they didn’t have my size!  Online, however, they still have it so I may have to make that purchase really soon.

Anyway, as I said, I’m a nursing mom.  I have always felt uncomfortable having to nurse in public with normal clothes because my whole back is exposed when I have to lift up my shirt.  I had never actually had a nursing shirt or dress until Mikarose sent me this dress:

… And I love it!  The front of the dress has an opening which will make nursing in the future much easier.  The dress has a nice stretchy material and is very slimming. I am pretty sure I have never received so many compliments on something I’m wearing than when I wear this Katherine dress. I enjoyed wearing this dress all day, loved how it fit, and loved how I felt while wearing it. And as a side note, although I’m not currently pregnant, I am pretty sure this would make a good dress for at least the first many weeks of pregnancy because of how stretchy it is. It accommodated my small belly distention (that I’m working to get rid of) really well.

Stuffed Chicken Marsala Recipe

My husband introduced me to Stuffed Chicken Marsala at Olive Garden and I have fallen in love with it.  It is so good.  Chicken + cheese + mushrooms = the yummiest chicken ever.

Stuffed Chicken Marsala

Cheese Stuffing

1/2 cup smoked provolone cheese
1 (8 ounce) shredded mozzarella cheese
1/4 cup parmesan cheese, grated
1/2 cup breadcrumbs
1 teaspoon fresh garlic, minced
1/4 teaspoon crushed red pepper flakes
2 tablespoons sun-dried tomatoes, flakes if in oil drain first
1/3 cup sour cream
1/2 teaspoon salt and pepper

Chicken

2 lbs boneless skinless chicken breasts
4 ounces cooking oil
2 cups flour
salt and pepper, to taste

Sauce

1 small onion, chopped
6 cups button mushrooms, thinly sliced
24 ounces marsala wine or 24 ounces beef broth
8 ounces heavy cream

Preheat oven to 350°F.

Stuffing:Combine all cheese stuffing ingredients in a bowl.

Chicken: Butterfly thickest section to create two lobes. I usually just pound out the chicken to flatten it and then add stuffing on half of it, then fold over the chicken. If you butterfly the chicken, place pounded chicken breasts on a plate and place desired amount of stuffing on one half of chicken breast.

Gently press stuffing down and fold over other side of chicken breast. Preheat a large sauté pan on stove top. Add 4 oz. oil; heat oil until shimmering.

Place approximately 2 cups flour in a pan and season it to taste with salt and pepper. Dredge chicken in flour and shake off excess flour. Place stuffed chicken breasts in sauté pan with the preheated oil.

Cook each side until golden. When chicken is seared on both sides remove them from sauté pan and place them in a baking pan and into the oven for 10-20 minutes.

Bake until juices run clear and stuffing and center reach a temperature of at least 165°.

Sauce: Add the onions to the sauté pan. Stir with spatula. After 2 minutes add the mushrooms; sauté mixture until onions are translucent. Deglaze sauté pan with the marsala wine (make sure to incorporate particles from bottom of pan). Bring wine to a simmer and add heavy cream. Simmer sauce on low heat until reduced by half.

Place cooked chicken breast on a plate and top with onions, mushrooms and sauce.

Homemade Smoothies

Smoothies, or “mimis” as my daughter calls them, are an essential food at our house. We used to go to our local smoothie shop all the time until we realized we needed to start saving more money so we started making our own smoothies.

There are a lot of good recipes out there, however, I never follow a recipe. For our basic smoothie, we add about 8 strawberries, 1 banana, and 1/2 cup to 1 cup of blueberries, plus enough milk to blend it up. I also like to add in about 1 cup of spinach to every smoothie I make and they still taste great. Do you have a favorite recipe?

Eating smoothies is a great source of fruits and vegetables and the kids love it. They get a bit messy and I’ve become a pro at getting stains/fruits out of clothes but it’s all so worth it!

My daughter saw me put spinach into the smoothie and asked, “Mama, why are you putting grass in my smoothie?”
