One and two-year-olds enjoy stories, songs, and finger plays. Parents/caregivers must accompany children to Toddler Time.

Kids Summer Movies at the Megaplex 2013

This summer, various Megaplex theaters have a great summer movie program – 12 movies for $12. You get to watch one movie a week for 12 weeks for only $1 each. That is a great deal, if you ask me. Movies start the last week of May and the Lehi Megaplex is the only participating theater here in Utah County, however, there are several theaters participating this year here in Utah.

Positive Body Image

As a girl, lady, woman … whatever I am, I’ve struggled with a positive body image. There’s always something that I feel could be improved. Playing and loving tennis as a teenager, I grew quite large thighs for my small body. I didn’t mind them back then, but now that I am older, and a mom who wants to look “normal,” whatever that is, they bother me. Fortunately, I know there’s nothing I can do about them so I spend very little time obsessing over them. What I do obsess over, however, is my loose skin on my abdomen. There’s nothing less attractive to me than all of the loose skin (and a small compilation of fat I’ve acquired) that rests on my abdomen. I mean, let’s be honest, after having two kids in less than two years, it’s more than likely my skin is going to be a little loose. But it still bothers me.

So what do I do? I exercise. If I wake up early. And if I have enough energy. But exercising can only get me so far after a while. What else do I do? Buy cute clothes. Because nothing feels better after changing messy diapers, cleaning up huge milk spills, and trying to wipe off who-knows-what off of my clothes than wearing new clothes. And after that? Well, I talk to people. Maybe the word “complain” describes it better. And it feels soooo good.

I have this wonderful friend. We don’t really talk much or see each other much despite living so close to each other but you’ve got to just believe me – she’s great. She has started a new “Fitness & Junk” blog which just makes me feel more motivated to exercise, because like her, I want to be more toned. Skinniness isn’t as big of a deal to me as being fit. She posts about her goals, what she’s been up to, and other motivational stuff. Most recently, she posted about an insecurity that she has – her burn scars. She was completely open with talking about it. And I loved it. Because we all have insecurities and we think everyone notices, that everyone cares, and really, people probably hardly notice, if at all. Her insecurity of her scars was surprising to me because as much as I know I noticed them the first time I saw her, I haven’t noticed them since. Something that could be a huge potential insecurity to her is something that I don’t think most of the people she interacts with often ever notice.

I think we all have these insecurities. As women, as human beings, we have these insecurities that we don’t want others to notice. We have insecurities that we can’t get rid of. We have insecurities that we talk about too much to try to get rid of the bad feelings we have. We have insecurities that we try to cover up and hide. But one thing that seems to help is talking about it and letting others lift us up. Hence, my beautiful friend, has started another blog for all of us to contribute to and it is perfectly named “You’re Beautiful.”

Take a few minutes and write down all of your insecurities and submit it to the blog. You can write anonymously. You can share your fears. And you will feel better. Because you are more than just your body.

Princess at the Pond 2013

Today, Wednesday, April 17, from 3-5 pm, the “Princess at the Pond” event will be held. Due to the weather, however, the event will be held at the Salem Community Center. This is a great event for all of those little girls out there who love princesses. The event costs $5 for each princess/participant and proceeds will go to Primary Children’s Medical Center!

Early to Bed, Early to Rise

Having a baby is exhausting. There’s really just nothing else to it. Whether you actually went through pregnancy and childbirth or not, when you have a little baby in the home, it is tiring. I was blessed with good sleepers and good sisters who told me all about how they got their children to sleep through the night so I only dealt with middle-of-the-night feedings for the first few weeks, but it’s exhausting. Only sleeping for a few hours at a time is exhausting. Tending to ever single need of a baby is exhausting. And if you have more than one child, taking care of the older children while taking care of the baby is exhausting.

I tend to stay up late with my husband so that we can have some time just to ourselves. It starts with cleaning the kitchen from dinner. Then we catch up on our favorite television shows on Hulu. And by the time we decide to stop watching shows, it’s usually really, really late. I wake up the next morning to my daughter, shouting as she’s walking down the hallway, “Mommy! I need to go potty!” I don’t know why she can’t just go sit on the toilet by herself without announcing it to everyone. And the rest of the day is slow going from there. I’m trying to quickly make food to feed the hungry children. I’m trying to find time to exercise. I’m trying to find time to take a shower. All day I’m just trying to keep caught up with my kids.

Well, I decided to change that. The goal is to wake up an hour before the kids wake up each morning. It gives me time to exercise, get ready for the day, and maybe even start breakfast all before the children wake up. I’m more productive during the day and don’t feel exhausted because I am able to wake up after 7-8 hours, getting enough sleep each night. With more sleep, I also am a lot more patient and loving towards my children. The things they do don’t bother me as much and I spend a lot more time playing with them each day when I get that early start to the day.

So I urge you to try it. Set your alarm, go to bed early, jump out of bed when that alarm goes off (or drag yourself out of bed like I do), and get a head start to your day. I feel amazing when I go to bed early, get up early – I’m sure you will, too!

Sometimes I miss my college days when I could take a nap in the middle of the day.

Ciabatta Bread/Rolls Recipe

I love Italian bread but more specifically, any type of Artisan bread so a couple of days ago, I tried my hand at Ciabatta rolls. I didn’t start them until 8:30 am and wanted them by 6 pm that evening so I was pushing it a little and had to cut my time short on letting it do what it does, but they still turned out amazing.

Makes 2 loaves or 16 rolls
Recipe modified from The Ktichn

It’s essential to make the “biga” first. The yeast needs to go through a biga, or pre-ferment stage, and needs to sit for about eight hours at least. Mine only sat for seven hours and worked out okay, but skipping this essential step is what gives the bread it’s amazing flavor, the chewy inside, and the crispy outside. It also helps to weigh out the ingredients.

Biga

4 ounce (1/2 cup) water
1/2 teaspoon active-dry yeast
5 ounce (1 cup) all-purpose flour

Dissolve the yeast in the water. Add the flour and stir to form a thick, gloppy paste. Give it a good fifty or so brisk stirs to build up the gluten. Cover and let sit at room temperature eight hours or overnight. After it has rested, the top will have many inverted bubbles on the top.

Now, to make the actual dough, follow the next set of instructions:

17 ounces (2 cups + 2 tablespoons) water
1 teaspoon active-dry yeast
Biga
20 ounces (4 cups) all-purpose flour
2 teaspoons kosher salt

Dissolve the yeast in the water in the bowl of a standing mixer. Scrape the biga into the water and break it up with your spatula or squeeze it between your hands. You don’t need to completely dissolve the biga; just loosen it up and break it into stringy blobs.

Add all of the flour and the salt. Stir to form a thick, very wet dough. Let this rest for 10-20 minutes to give the flour time to absorb the water.

Fit your standing mixer with a dough hook and knead at medium speed for 15-18 minutes (Level 5 or 6 on a KitchnAid). Keep a close eye on your mixer as it has a tendency to “walk” on the counter at this speed (I had to leave to go take care of kids while it was mixing and mine nearly fell off the counter).

The dough will start off sticking to the bottom and sides of the bowl. Around the 7-minute mark, it will start to pull away from the sides of the bowl, collect around the dough hook, and regularly slap the sides of the bowl. If it doesn’t, nudge your mixer speed up a notch. Also, if the dough starts climbing the dough hook, stop the mixer and scrape it down again. By the end of kneading, the dough will look smooth and creamy with a glossy shine. It will puddle back into the bowl once you turn off the mixer, and this is fine.

Cover the bowl and let the dough rise at 70° – 75° for 2-3 hours, until tripled in bulk.

Dust your work surface heavily with flour. Set two sheets of parchment near your work surface. Scrape the dough out of the bowl onto the flour, taking care not to deflate it too much. Dust the top of the dough with more flour. Using a pastry scraper or pizza wheel, cut the dough in two pieces for loaves or into 16 pieces for rolls.

Brush your hands with flour. Working gently but swiftly, scoop the the loaves (or the rolls) one at a time from the work surface to the parchment. Press your fingertips about halfway into the dough to dimple the surface and slightly flatten the loaves (or rolls). Let the loaves (or rolls) rise, uncovered, for 30-40 minutes. When ready to bake, they should look pillowy with many big bubbles just beneath the surface.

Preheat the oven to 475°F while the loaves are rising. If you have a baking stone, put it in the oven now.

When ready to bake, slide the loaves, still on the parchment, onto a pizza peel or baking sheet. Transfer them to the oven to cook, either on the baking stone or directly on the baking sheet if you don’t have a stone. Bake for 20-30 minutes, until puffed and golden brown. Slip the parchment out from under the loaves and cool completely before eating.

  • Advance reservations for free tickets for Free Day will be made available online only at 12:00 Noon MT on the Tuesday prior to each scheduled Free Day
  • limited number of tickets will be set aside for visitors who arrive on Free Day without a ticket.  If you are willing to take a risk, we encourage you to come to the Museum on Free Day even if you don’t have an advance reservation.  If tickets are still available, you will be admitted.  You may be asked to wait until later in the day and, unfortunately, you may be turned away.

Who: Anybody who wants to participate may. This is a family-friendly event, strollers are welcome. Families will be kept together.

Where: Runner’s Corner (835 S. 700 E. Orem, UT right across from the Costco gas pumps) is where we will meet, but there is NO LIMIT to where you can go to accomplish the hunt.

What: Sojourners Running Club of Utah in partnership with Runner’s Corner and the event sponsor adidas are hosting a scavenger hunt run that will blow your socks off!

When: Tuesday, April 16th, 2013 at 6:00 p.m. Teams will be formed from 6:00-6:30, Scavenger Hunt will begin at 6:30.

Why: To promote running and fitness through family-friendly activities.

How: Alright, here’s the vision: Everyone comes between 6:00 and 6:10. You put your name on a slip of paper provided. (Families will put the family name and number of family members e.g. Scoville Family 3, meaning 3 individuals including babies, toddlers etc.) then at 6:10 we’ll draw names and assign team. We’ll wait to see how many people RSVP and how many show up to say how many teams and how many on each team we’ll have. So teams will be assigned and then Scavenger hunt lists will be handed out. Families will have a little advantage and will have shorter lists. Teams will have 30 minutes to complete their lists and return. Every team that is able to complete their list and return within the designated time will be eligible to enter the drawing for free adidas stuff.

Additional information: adidas will be providing full size runs of the following shoes that event participants will be able to test out for both men and women (first come, first serve): supernova Glide, adiZero Tempo and adiZero Adios.

Utah Valley Wolverine Baseball Giveaway

Have you ever been to a Utah Valley Wolverine baseball game? I went last year and it was completely packed. I felt like I was missing out on a Utah Valley secret! There were so many people there and the crowd seemed to love being there.

The next set of games at home is coming up next week, starting on April 11 versus Houston Baptist at the Utah Valley University baseball field. You can catch BYU versus UVU tomorrow night at BYU.

Utah Valley Moms has four tickets to April 11’s 6 pm baseball game to give away! Thank you to the Utah Valley Bureau for donating the tickets! Giveaway is open to US residents over 18 years old who can attend the April 11th baseball game. Giveaway ends on April 4, 2013 at 11:59 pm MST.
